Bake The Garden Base

Ingredients
1 sheet puff pastry, about 275 g
4 large eggs
250 g ricotta cheese
100 g cream cheese
1 tablespoon fresh lemon juice
1 teaspoon finely grated lemon zest
1 tablespoon chopped fresh dill
1/2 teaspoon sea salt
1/4 teaspoon black pepper
250 g asparagus
1 cup green peas
1 tablespoon olive oil
2 tablespoons grated Parmesan
1 tablespoon fresh basil leaves
1 tablespoon milk
Step 1
Heat the oven to 200°C. Place the puff pastry on a baking tray lined with baking paper.
Score a 2 cm border around the edge without cutting all the way through. Lightly brush the border with milk.
Get the center several times with a fork, then cover it with another sheet of baking paper and place a smaller baking tray on top. Bake for 15 minutes.
Remove the upper tray and paper, then bake for another 6 to 8 minutes until golden and crisp.
Step 2
While the pastry bakes, place the eggs in a saucepan and cover them with cool water. Bring to a gentle boil and cook for 8 minutes.
Transfer the eggs to cold water and let them cool before peeling. Cut each egg in half.
Bring another saucepan of water to a simmer. Cook the asparagus for about 2 minutes and the peas for about 1 minute. Drain well.
Step 3
Combine the ricotta, cream cheese, lemon juice, lemon zest, dill, sea salt, and black pepper.
Spread the mixture across the cooled pastry center, leaving the raised golden border visible.
Arrange the asparagus over the cheese, then scatter the peas between the spears. Drizzle lightly with olive oil and sprinkle with Parmesan.
The arrangement does not need perfect symmetry. Vegetables rarely arrive with architectural ambitions.
Step 4
Return the tart to the oven for 5 minutes, just long enough to warm the topping.
Remove it from the oven and arrange the halved eggs across the surface. Add fresh basil leaves and a little extra black pepper.
Let the tart rest for 5 minutes before cutting into four portions. Serve warm or at room temperature.
