Peas are one of those ingredients that are easy to underestimate. They often sit quietly in the freezer until you need a last-minute side dish, but they can do much more than that.
Their natural sweetness works beautifully with herbs, cheese, pasta, eggs and grains, which makes them perfect for quick everyday cooking. Here are a few easy ideas that prove peas deserve more attention.

1. Creamy Pea Pasta

This is one of the quickest dinners you can make when the fridge looks nearly empty.
Cook pasta until al dente, then blend or mash warm peas with a little olive oil, Parmesan, lemon juice and black pepper. Add a splash of pasta water until the mixture turns into a smooth sauce.
Toss everything together and finish with more cheese.
Tip: Do not blend the peas completely smooth. Leaving a little texture makes the sauce feel more homemade and less like a puree.

2. Pea and Feta Toast

Think of this as avocado toast’s brighter, slightly sweeter cousin.
Mash cooked peas with lemon juice, olive oil, salt and plenty of black pepper. Spread the mixture over toasted sourdough and crumble feta on top.
Fresh mint works particularly well here.
Best for: Breakfast, lunch or a quick afternoon snack.
For extra richness, add a poached or fried egg.

3. Pea and Mint Soup

This soup tastes fresh even though it requires very little effort.
Cook onion until soft, add peas and vegetable stock, then simmer briefly before blending with fresh mint.
A spoonful of yogurt or cream gives it a silkier finish.
Tip: Avoid cooking the peas for too long. A short cooking time helps preserve their bright color and sweet flavor.
Serve hot on a cooler evening or chilled when the weather is warm.

4. Pea Risotto

Peas are almost made for risotto.
Their sweetness balances the savory rice and Parmesan, while their bright green color keeps the dish from feeling too heavy.
Stir most of the peas in toward the end of cooking, then mash a smaller portion and mix it through the rice for extra creaminess.
Tip: Finish with lemon zest. That small addition makes the whole dish taste noticeably fresher.

5. Pea and Potato Frittata

If you have eggs, peas and a few potatoes, dinner is practically solved.
Cook thinly sliced potatoes until tender, add peas, then pour over beaten eggs seasoned with salt and pepper. Cook gently until almost set before finishing under the grill.
Add goat cheese, feta or cheddar if you want something richer.
Best for: Using leftovers, because the frittata is just as good cold the next day.

6. Pea, Couscous and Herb Salad

For something lighter, combine peas with couscous, cucumber, spring onions and plenty of fresh herbs.
Dress everything with olive oil and lemon juice, then add feta or toasted nuts for more texture.
Tip: This salad improves after 20–30 minutes because the couscous has time to absorb the dressing.
It also travels well, making it useful for lunch boxes and picnics.

Why Peas Work So Well

The best thing about peas is how little effort they demand. Frozen peas can go straight into soups, pasta sauces and stir-fries, while fresh peas need only a few minutes of cooking. They are sweet enough to work with mint and lemon, but savory enough to pair with cheese, eggs and grains.
So the next time there is a lonely bag of peas in the freezer, do not automatically relegate it to the side of the plate. With a little lemon, herbs or cheese, it can easily become the beginning of dinner.
